1997 - Double, Double, Toil and Trouble


This was not exactly our best day. We had a problem with the melting morsels for our Buckeyes for some reason. The chocolate cooled too quickly, got thick and unreasonable. Lisa finished without me, giving us an abundant 100 Bucks from a double batch. And that is probably where the problem lies - our relentless desire to double! If we had simply melted one package of chocolate chips at a time, I'm sure we wouldn't have had any problems.

As for the German Chocolate Brownies that we decided to try this year, one pan turned out totally wet in the middle even thoug we baked it according to the recipe's instructions. Brownies can be so fidgety sometimes. They always look underdone but you're always warned by the recipe not to over bake! What's a sister to do?
Of course, it could've been  my mis-counting the Baker's squares ... again. Still, I didn't much care for the batch that "turned out" either! Next year, I suggest sticking to our faves - Baker's Dunkable Brownies and "Joy's" Brownies Cockaigne.


However, if we decide to try it again, don't double the recipe and do double-check the squares!

Baker's One Bowl German Sweet Chocolate Brownies

1 pkg (4 oz.) Baker's German's Sweet Baking Chocolate
1/4 c (1/2 stick) butter or margarine
3/4 c firmly packed brown sugar, divided
2 eggs
1/2 c flour
1 c chopped pecans or walnuts, divided, optional*
1/4 c milk

Preheat oven to 350 degrees Fahrenheit. Grease bottom and sides of 8-inch square pan.

Microwave chocolate and butter in large microwaveable bowl on HIGH 1 1/2 minutes or until butter is melted. Stir until chocolate is completely melted.

Stir 1/2 cup of the brown sugar into chocolate until well blended. Mix in eggs. Stir in flour and 1/2 cup of the nuts until well blended. Spread in prepared pan.

Mix coconut, remaining brown sugar and nuts in same bowl. Stir in milk until well blended. Spoon evenly over brownie batter.

Bake 35 minutes or until toothpick inserted in center comes out with fudgy crumbs. DO NOT OVERBAKE. Cool in pan. Makes 16 fudgy brownies.

*If omitting nuts, increase coconut to 2 2/3 cups (one 7-oz. package)
